  • 1 large soup pot

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion minced
  • 1 poblano pepper diced
  • 3 cups soup broth chicken or vegetable
  • 4 corn tortillas cut into strips
  • 4 cloves garlic minced
  • 1 jalapeno diced and seeded
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 2 cups canned tomatoes fire roasted
  • 1 cup crushed tomatoes
  • 1 15 oz. can black beans or cannellini beans optional, other protein options can be used
  • Monterey Jack or Pepper Jack cheese optional for garnish
  • Crushed tortilla chips avocado, cilantro, etc (for garnish)

Instructions
 

  • Heat olive oil in a large soup pot over medium heat
  • Sauté the onion, garlic, and both of the peppers. Cook for 3-4 minutes or until they are softened.
  • Add the cumin, chili powder, salt and pepper and cook together for about 30 seconds.
  • Add the soup broth into the pot and cook for about 4 minutes. You want the broth to be warmed.
  • Add the tortilla strips and tomatoes.
  • Reduce the heat to medium-low, cover, and let the soup simmer for about 15-20 minutes.
  • Add your choice of protein. 1 can of black beans, shredded chicken or other options (listed in article above).
  • Keep on the heat for another 3 minutes.
  • Garnish with shredded cheese, crushed tortilla chips, or other garnishes (ideas listed in article above).
